In a restored 100-year-old dairy farm in Goshen, Barbara and Alan Glustoff make small-batch raw-milk cheeses from the milk of pastured, grass-fed cows. Alan’s dairy-culture background and the couple’s shared passion for cheese shape an operation that combines traditional cheesemaking with a below-ground European-style aging room. The family-owned creamery is also New York’s first cheesemaking facility powered exclusively by solar energy, with nearly 200 panels supplying its farm and aging rooms.
