At Pittsburgh’s Engine House 25 Wines, grapes sourced from premium growers in California, Chile, and South Africa become small-batch wines made by hand from sorting through bottling and waxing. The winery uses traditional, old-world techniques, ages its wines 18–24 months in oak barrels, and adds only a light dusting of sulfites so the grapes’ natural character remains central.
