Northwest Territory Cider Co. is a planned Northeast Ohio cidery making terroir-forward dry cider from foraged apples and heritage orchard varieties. Founded by husband-and-wife team Zachary and Allison Ritterspach, the company draws on the region’s Northwest Territory history and Zach’s Cider Institute of North America certification to revive the rustic, complex cider tradition associated with early Ohio. The cidery expects to launch publicly in summer 2026, with a half-acre orchard and future outdoor tasting room in Chagrin Falls.
