Veteran-founded Paradox Brewery makes independent craft beer in North Hudson, where its Adirondack operation grew from Paul Mrocka’s homebrewing experiments after he discovered German brewing traditions while serving as an Army pilot. Built in 2019 after seven years of brewing underground for locals, the 25,000-square-foot brewery draws naturally filtered water from 600 feet beneath the Adirondack Park and produces beer for its mountain-view taproom and beyond. Its flagship Paradox IPA originated in 2013, while the brewery’s capacity reaches 15,000 barrels annually.
