Since Michael Troyer bought a meat market in Trail, Ohio, in 1912, Troyer’s Genuine Trail Bologna has made its signature all-beef bologna with a secret family recipe and hickory smoking. Now operated by fourth-generation brothers Ken and Kevin Troyer, the family business produces roughly 25,000 pounds a week and ships its bologna nationwide. A store at the factory keeps the Holmes County tradition close to home, serving fresh cuts and hot sandwiches alongside the packaged product.
