Born from Megan Mills’s furlough-era decision to pursue baking full time, Fatcat Baking is a small-batch Syracuse bakery making 100% vegan pastries and custom cakes. The Jewish, woman-owned business was incorporated in January 2020 and has grown from a home kitchen into a commercial operation supplying vegan pastries to local businesses while also meeting customers at pop-ups and markets. Named for the household cat Loki, Fatcat aims to make plant-based pastry inviting to everyone from committed vegans to the merely curious.
