Operated by Matt Steiner and his family in Marshallville, Ohio, Pine Tree Dairy raises Holsteins and develops dairy genetics for private marketing and selected auctions. Its 2012 facility houses 650 milking animals, while a family genetic team builds on bloodlines such as Wesswood-HC Rudy Missy, purchased in 2003, whose descendants have shaped the herd’s production and genetic progress. The operation also includes a home-farm heifer facility and four satellite herds.

Calkins CreameryAt Highland Farm in Honesdale, Calkins Creamery turns milk from its own registered Holstein herd into small-batch artisan cheese, including raw-milk wheels aged in a former underground wine cave.
