Opened in southwestern Pennsylvania in 2008, Shields Demesne Winery makes Melomel—wine fermented from grape juice and honey. The winery preserves a formula learned from Dr. Ferenc “Frank” Androczi’s old-fashioned European winery, aging the wine for at least two years in former Bourbon oak barrels. Fermentation, aging, and bottling take place in a greenhouse shared with the Shields Herb & Flower Farm, an unusual arrangement that has become part of the winery’s character.
