For six generations, Artikaas has made Original Dutch Gouda using traditional methods and milk from Dutch cows, bringing the cheese’s pastoral character to eaters in Holland and beyond. Its range pairs aged and raw-milk Goudas with unexpected ideas, including sheep’s-milk Holy Sheep and Japanese seven-spice Togarashi Gouda. Artikaas’s cheeses have earned recognition at the World Cheese Awards, including Holy Sheep’s 2025 Super Gold.

• Calkins CreameryAt Highland Farm in Honesdale, Calkins Creamery turns milk from its own registered Holstein herd into small-batch artisan cheese, including raw-milk wheels aged in a former underground wine cave. The creamery is part of a sixth-generation family farm established in 1841, with cheesemaker and owner Emily Montgomery carrying the farm’s tradition into products such as its award-winning Noble Road Brie and distinctive Vampire Slayer.
