Buffalo Distilling Company makes farm-to-bottle spirits in Buffalo, using 100% New York-grown grains, fruits and honey in its in-house distilling. Re-established in 2012 after the original Buffalo Distilling Company’s 1883–1914 run, it moved to the city’s historic Larkin district in 2016 and now pairs its stillhouse with a cocktail bar, tasting room and live-music setting.

Lock 1 Distilling CompanyOpened around Memorial Day 2017 by three cousins, Lock 1 Distilling Company makes small-batch spirits in Phoenix, becoming the first distillery to open in Oswego County since Prohibition. It operates as a New York State Farm Distillery, sourcing its winter wheat, rye and corn from nearby Lysander and using custom equipment handcrafted by two of the owners.
