Born from the friendship of Ashley Albert and Kevin Rodriguez, The Matzo Project makes Brooklyn-made matzo and related kosher foods with a modern snacker's spirit. Inspired by a Miami grandmother and produced in small batches, its unusually crisp flats and sturdy chips are designed to be enjoyed beyond the seder table. The company has since grown into a four-person team and expanded into soup kits and gluten-free baking mixes, all made in a nut-free, dairy-free facility.
