Family roots and a revived sugaring operation define Sterling Valley Maple, a Lewis County producer of pure maple syrup from thousands of trees in the Adirondack foothills. Josh and Gena Stamp work with three generations of maple producers, continuing a tradition that began in 2010 and moved to its Croghan sugar shanty in 2016–17. The family also turns its certified organic syrup into products such as maple cream and flavored syrups, and sells throughout New York and across the country.

Old State FarmsOld State Farms makes pure maple syrup and maple specialties from wild-grown hard maple trees in the Appalachian mountains of northwest Pennsylvania. What began in 2001 with a couple tapping 20 trees on the husband’s parents’ farm has grown into a family operation with 3,500 taps, producing about 1,500 gallons of syrup each spring.
