Started in Ballston Spa in 1925 by Frank Whalen, Whalen’s Horseradish Products makes pure horseradish and other specialty foods in Galway, New York. The family business still follows a notably hands-on process, using U.S. Grade 1 “Fancy” roots that are trimmed, peeled and ground by hand before being cured in citric acid rather than vinegar. Current owner Tim “Rootman” Bibens carries on the company’s traditions while offering its products through retailers, wholesale and private-label partnerships, and the Root Cellar outlet.
